Commonly used in the cuisines of many Latino, African, Caribbean and Asian cultures, Amaranth is possibly the least often offered vegetable in any plant sales/nurseries. Yet Amaranthus leaves are highly nutritious and so much easier to grow than all the popular spring and fall greens that more gardeners should at least tried it once. Where spinachs and lettuces start to bolt at the first sign of heat, this adaptable plant shines. A. tricolor 'Miriah Leaf' is our top performer for both early and late season crops. This beautiful heirloom red-veined green leaf variety adds a unique color to salads, but can also be sauteed or pickled. Its tender stems and leaves are often compared to spinach in terms of taste.
